Do you ever want to rewind time? Go back and appreciate what you because maybe you didn’t appreciate it all that much as it was happening? I often find this true for things that happened during my childhood. First of all, being taken care. Hello, not a care in the world other than what was for breakfast and what you were going to do that day! So simple. Plus, instead of me making these cereal bars for myself my Mom would do it! SCORE!
How about nap time? My kids FIGHT this with every fiber of their being. I’m sure I did the same, but now I would give for a nap. Wouldn’t that be awesome? Someone telling you that you needed to go nap for a while in the afternoon. Sounds like pure bliss to me!
Cereal Bar Recipe
As the Summer Olympics role around a memory of mine from childhood surfaces. At my house we are huge fan of the Olympics. I remember waiting and waiting for them to come. When they finally got here we would all pile in the downstairs family room and watch as much as we could. Of course, that was before fancy things like DVRs and stuff so we had to be glued to the TV at every moment!
I remember being completely mesmerizedby the synchronized swimmers and dreaming of having that talent. I’m still dreaming of having that talent! I could watch them for hours and hours. I can’t figure out how they are that talented. Truly a gift!
Did anyone else spend hours of their childhood watching the Olympics every time they rolled around dreaming of diving, running track, swimming or maybe something else? What is life without dreams? Pretty boring!
Cheering Team USA on during the Olympics is always an exciting experience! Did you know that 77% of Americans say watching Team USA inspired them to pursue their own dreams? Plus, over 84% of you consider Team USA athletes are real life heroes, which I totally agree with! Not only that, but83% if Americans say watching Team USA inspires them to be more active!
So while you are relaxing on your couch, dreaming of what activity you’d participate in if you were in the Olympics whip up a batch of this cereal bar recipe to enjoy with the family!

- 4 cups crisp rice cereal
- 2 cups dry roasted peanuts
- 2 cups M&M’s
- 2 cups light corn syrup
- 1 ¾ cups sugar
- 2 ½ cups creamy peanut butter
- 1 ¾ teaspoons vanilla

In a large mixing bowl, combine the cereals, peanuts and M&Ms. Set aside.
In a medium sized saucepan bring the corn syrup and sugar to a boil, stirring frequently. Remove from heat. Stir in peanut butter and vanilla.
Pour syrup mixture over the cereal mixture in the large mixing bowl. Toss to coat evenly.
Spread mixture into prepared pan. Let sit until mixture is set.
Tips
For best results, wrap each of the cereal bars in parchment paper or plastic wrap so that they don’t stick together. You can also just place a sheet of parchment paper between the layers you stack in an airtight container.
Store at room temperature for 3-4 days or store in the refrigerator for up to a week. If stored in the fridge, allow the bars to sit out for a few minutes before consuming so that they soften a bit.

Hi I stumbled on your recipe trying to figure out how to use up some items in my pantry. My son who is 7 was very excited by possibly getting m & m’s for any meal. I have a question about how to best store these. I’m Florida and its super hot here so on the counter might not hold up to well. Fridge or freezer for long term? Thanks

Fridge would work great if you are going to eat them in the first few days, if not then I’d probably toss them in the freezer!

Hello Julie, omg do those look delicious. I am going to make these for my grand babies! I will have to use gluten free Cheerios though I’m allergic to gluten! I made the Poke cake with pudding last night it is so tasty. I’ve made the Poke cake without the pudding I like it better with the pudding in it! My husband is inhaling a piece right now, he said”wow this cake is awesome” great flavor! Hope you know I’ve had to start walking I make a lot of your recipes and the pounds were creeping up on me. That’s a good thing though so thanks! Lol, have a fantastic week!
