A Phenomenal Mash-up of Two Favorite Treats!

Cookies are a yummy treat. Fudgy brownies are a yummy treat. Put them together into one treat and you just might explode. Just kidding. Do I have your attention now?

Seriously, these cookies tasteA-mazing! Plus they look all fancy like they came from a bakery. So you can totally impress your friends.

Chocolate chip cookies have always been a favorite of mine. But sometimes I want something a little more chocolatey. You know, like brownies. When I saw a recipe for brookies over at Mel’s Kitchen Cafe, I knew I had to give them a try.

I figured combining two of my very favorite treats had to be a win. Which of course it was. An epic win actually.

These chocolate chip brownie swirl cookies are soft, chewy, and filled with chocolate goodness. I ate way more than my share of them. Beware, they are scary good!

HOW TO MAKE BROOKIES

  1. Brownie cookie dough: Cream butter and sugars in a large mixing bowl. Add the egg, yolk, and vanilla and beat till creamy. Stir in the dry ingredients. Cover and chill while preparing chocolate chip dough.

  2. Classic chocolate chip cookie dough: In a separate bowl, cream softened butter and sugars in a large mixing bowl. Add the egg, yolk, and vanilla. Beat till creamy.   3. Prep for baking: Preheat your oven to 350 degrees. Line cookie sheets with silicone or parchment paper, or spray with cooking spray.
  4. To form brookies: Take a small portion of brownie dough and roll it into a ball between the palms of your hands. Take a small portion of chocolate chip dough and roll it into a ball.   5. Bake: Place on prepared baking sheet and bake at 350° for about 10 minutes.
  6. Cool: Let cookies cool on the pan for 3-4 minutes, then transfer to a cooling rack to cool completely.

HOW TO STORE LEFTOVER COOKIES:

These cookies will last for 3-5 days at room temperature if stored in an airtight container.

To store them longer, you can freeze them. I like to place them in heavy-duty ziplock freezer bags. They will last for 5-6 months in the freezer.

Can I freeze the cookie dough?

I think this particular cookie recipe works best with fresh dough because the brownie part needs to be cold while the chocolate chip dough is at room temperature.

However, you can still freeze it. You can freeze the two types of doughs separately, or roll them into balls and freeze them that way. The dough will last about 3 months in the freezer in an airtight container.

To bake frozen cookie dough balls, you can either bake them frozen and add 3-4 minutes to the baking time, or thaw the cookie dough balls first.

BROOKIE COOKIE RECIPE PRO TIPS:

  • For best results, use room temperature butter that has softened on the counter for a few hours. Don’t forget to make the brownie dough first. It needs to be chilled so it firms up and doesn’t spread too much while baking.
  • If you are using unsalted butter, add an additional 1/8 teaspoon of salt to each of the doughs.
  • You will have slightly more cookie dough than brownie dough. You can proportion the dough accordingly, or use the leftover dough to make chocolate chip cookies. And of course, you have my permission to simply eat the leftover cookie dough. 🙂

Handy Tools for Making Brookie Cookies:

  • I have a stand mixer and a Bosch, but for making cookies I like to use a hand mixer. It’s great for creaming the butter and sugar.
  • I love my silicone pan liners and use them every time I make cookies. Nothing sticks to them!
  • You can use regular chocolate chips, but I like using mini chocolate chips for this recipe. You get more chips in every bite, and the dough is also a little easier to roll together.

Brookie Cookie Recipe

Half chocolate chip cookie, half brownie. One incredible treat!

Ingredients

Brownie Dough

  • 10 Tbsp soft butter (1/2 cup + 2 Tbsp)
  • 2/3 cup white sugar
  • 2/3 cup brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 1/4 cup + 3 Tbsp all purpose flour (7.2 oz)
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Chocolate Chip Cookie Dough

  • 10 Tbsp soft butter (1/2 cup + 2 Tbsp)
  • 1/3 cup white sugar
  • 1 cup brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 2 cups + 2 Tbsp flour (10.8 oz)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mini semisweet chocolate chips

Instructions

  1. FOR BROWNIE DOUGH: Cream softened butter and sugars in a large mixing bowl. Add the egg, yolk, and vanilla and beat till creamy, about 2 minutes.
  2. Combine flour, cocoa, baking soda, and salt in a small bowl. Sift into the sugar mixture. Stir till the dough is just combined. Cover and chill while preparing chocolate chip dough.
  3. FOR CHOCOLATE CHIP COOKIE DOUGH: Cream butter and sugars in a large bowl. Add the egg, yolk, and vanilla. Beat till creamy.
  4. Whisk flour, baking soda, and salt in a small bowl. Add to the sugar mixture with the chocolate chips. Stir till ingredients are well mixed.
  5. TO MAKE BROOKIES: Preheat oven to 350 degrees.
  6. Take a small portion of brownie dough and roll it into a ball. Take a small portion of chocolate chip dough and roll it into a ball. Lightly smash the balls together, and form a new larger ball of dough.
  7. Place dough on silpat lined or lightly greased cookie sheets. Bake at 350° for about 10 minutes or until the edges of the chocolate chip cookie are golden brown.
  8. Cool on pans for 2-3 minutes, then remove to a wire rack to cool completely.
